Abstract
This document reviews the microbial origin, toxicology, and public-health relevance of ochratoxin A, a fungal mycotoxin produced mainly by Aspergillus and Penicillium, with P. viridicatum prominent under cool, high-moisture storage conditions. It summarizes evidence of potent, species-wide nephrotoxicity, teratogenicity in rodents, and renal carcinogenicity in mice, alongside mechanisms including competitive inhibition of phenylalanyl-tRNA synthetase, suppression of protein synthesis, and inhibition of renal phosphoenolpyruvate carboxykinase. It links chronic dietary exposure to mycotoxic porcine nephropathy and posits a causal role in Balkan endemic nephropathy given frequent food contamination and detection of the toxin in human blood from affected regions. Surveys report contamination of cereals and animal feeds across Europe and North America, with documented residue carry-over into pig tissues.
